Can someone tell me if I plug an adaptor into the battery charging port and get a voltage gauge can I read real time voltage while Im riding
voltage readout using a voltage gauge?

NO, you can not.
You need an inline watt meter, connected to the OUTPUT from the battery, assuming OUTPUT is what you wish to measure.
Lots of them available, relatively inexpensive, you need to measure BOTH VOLTS AND AMPS, or WATTS, in order to record the state of your battery. Volts alone only gives a very rough, and inaccurate, estimate.
