It's hard to find this through a Google search, or I'm using the wrong search terms, but I happen across one now and then in my internet travels.
This thread will be a repository to keep track of which eMopeds are registerable as such. As more are added in the replies, I or another mod/admin will update this top post. When you come across an eBike that can be registered as a moped (has a VIN, proper lights, license plate holder) please come back and let us know about it here.

- UBCO Adventure 2x2, $5k: https://ubco.com/collections/electric-bikes/products/2x2-adventure-bike
It is expensive for its speed and range, but it's 2WD with "dual sport" tires, so although it is slow for street use, it would be great on gravel or dirt roads compared to something like a combustion scooter. It also seems to be a quality bike, as the Australian government now uses a more powerful RWD version for their postal delivery staff. - Jolta Aventura X, $4700, 72 V, 20 Ah, 3 kW motor; there are 30 and 50 mph versions. Here's the 50 mph one: https://jolta.com/product/aventura-x-electric-moped-50mph/
To me, this is a scooter, not a moped, as there are no pedals. It says "DOT Approved". Probably registerable as a motorcycle and the 30 mph one is registerable as a moped. - Jolta Gio Italia, $2k, 60 V, 20 Ah, 500 W motor, 30 mph: https://jolta.com/product/gio-italia-ultra-electric-moped-2/
They say 30 mph, but with a 500 W motor, I'm skeptical.
