This is my new ebike to replace my stolen one but this time I have made a serious security upgrades. It's the exact same HeyBike Brawn that I had before but with....
  1. Apple AirTag hidden on the bike.
  2. Keyed Masterlock, Combination lock, SKUNKLOCK (Carbon Angle Grinder Resistant Deterrent U Lock for Bike Motorcycle Patented Blade Destroying Multi Material Anti Grinder Technology), an an additional U Lock.
  3. WSDCAM Anti-Theft Bike Alarm with Mount, 113dB Burglar Vibration Motorcycle Bicycle Alarm Security System
Last time I had a single Kryptonite chain lock here's my previous post about what happened when it was stolen: https://ebikesforum.com/threads/my-heybike-was-stolen-in-downtown-denver-colorado.7826/

I also have a set of brake locks that go in the rotors and can't pass the caliper so unless they want to carry off my 100lbs bike they are fairly stuck.
Have you ever used the locks that go on the brake levers at the handlebars? I'd like to know how well they work. I think if I used a caliper lock, I would either get my sticky fingers all over it, or even more likely, spill my morning coffee on it.

True but does a thief know that? Would they still want a now F-d up bike if the had to cut the brakes to steal it?
Agreed. Most thieves likely want to dump it quick in working condition for cash. Many likely have no mechanical skills or if they do wouldn't be interested in the time and effort of finding parts to repair before flipping. Unfortunately it's getting to the point where you need a trailer just to carry all of your locking devices and it takes the joy out of what should be a fun and healthy lifestyle.

Maybe just cut hands off and stop theft altogether. At least a finger. ¯\_(ツ)_/¯

This is my new ebike...
I went with a pair of Altor APEX Ti folding key locks. They can be cut with a diamond wheel, but it will take a while, be loud as hell, and put on a serious show. U-bolt locks are heavy and sometimes make locking the bike to something difficult. Ottolock makes great ratcheting combination locks that can be used in many ways. I can lock the bar-bags or panniers to the bike with them. Using multiple types of locks only benefits. The best deterrent for ebike theft is a ground-to-ground opaque cover with multiple locks of different types locking the bike to something immovable and a motion alarm under the cover. Most ebike aren't stolen by being ridden away; they are stolen and loaded into a nearby vehicle.

Stay safe.
