Using the Hyena app on a mounted phone with a Hyena hub motor bike such as a few of the Trek models, can you live monitor the active parameters such as speed, assist level setting, battery life, etc?
Yes. The only thing you can’t change is the assist level while you’re moving. You need to come to a complete stop to modify the percentages of the three levels of assistance. I ride a Trek Domane AL 5+ and am incredibly happy with it!

I just bought a FX +2 and have used the Trek Central app which I assume is a shell program written on top of the Hyena app. After inputting my weight, it will be interesting to see just how accurate the range estimations are. As I hope to only use level 3 for big hills, I wonder how much a different it makes from changing default 75% to 100%?
